The Perfect Chance
Needless to say the Salmonella poisoning has kicked me around physically. Lost weight, had nasty autoimmune things happen to my ankles & elbows and generally had the great fitness I was so proud of stripped away rather suddenly. However I don't think this is the time to begin wearing a face that suggests I've just eaten lemons.
Rather this is the chance to re-examine where I was beginning to let things slip. I was back gaining weight before the Salmonella so rudely rearranged things. Having been on a very restricted diet and being still on one where somethings like alcohol are off limits, I've had the chance to think things through.
I noticed our housemate was thoroughly enjoying a cucumber & tomato salad. I known for quite a while that I should have been eating more leafy greens. So I decided to get creative. I love Greek Salad. I've decided that lunch is likely to be a Greek Salad with a protein source tossed in...and there is nothing easier than adding a tin of chickpeas or 5 bean mix to the salad. Add a generous dash of olive oil and lemon juice and you have a very filling lunch.
An alternative is to make the salad a bean one...so majority chickpea with some tomatoes added. Or some boiled eggs. So long as the main ingredients are vegetarian, it works. And if you want to, you can thin out Hummus bi Tahini with olive oil and turn it into the salad dressing by pouring it over a bowl of lettuce, tomato and cucumber.
This then is my new plan. Lunch is to be a salad. As you can see, it's chock full of fibre that will keep you full for hours and it contains all the vitamins that you need.
The main change in game plan has been of course in my head. This is where the essential bits happen. Change myself into a leafy green salad eater and I'm ahead.
